Polenta is ground corn boiled in water, often served with butter and cheese. This dish comes from Italy but also occurs under other names in different countries. Depending on how finely or coarsely the polenta is ground, this dish may have a creamy or a firmer texture once cooked. Creamy polenta can be served as a side dish with meat dishes such as beef cheeks or grilled chicken. From more firm polenta you can prepare chips, you can grill and fry it. Below you will find a recipe for polenta that will be perfect for a quick dinner. I made this polenta with a lot of Parmesan cheese, butter and a little salt. After cooking it turned out creamy and perfect. I served it sprinkled with extra Parmesan cheese and drizzled with butter.

Ingredients for polenta with Parmesan and butter.

  • 1,2 l water
  • 1 teaspoon of salt
  • 150 g polenta
  • 2 tablespoons of butter
  • 50 g Parmesan cheese

How to make polenta with Parmesan and butter.

Pour water into a pot, add salt and bring it to a boil. When the water in the pot starts to boil, slowly add the polenta, stirring constantly to avoid lumps. Then, reduce the heat to low and, stirring constantly, cook uncovered for 5 minutes. Next, cover the pot with a lid and cook over very a low heat for about 35 minutes, stirring the polenta from time to time so that it does not burn. Remove the cooked polenta from the heat, add Parmesan cheese and butter, then mix it thoroughly. Let it stand for 5 minutes before serving. Serve the polenta while it is still warm.

Polenta grains can be smaller or larger, it all depends on how finely or coarsely ground the corn is, from which the polenta is made. Depending on which polenta grains you choose, the cooking time may be slightly different from the one given by me. While cooking, it is worth tasting the boiling polenta, because it might be ready a little earlier than after 35 minutes.
