The fries I usually make are mostly oven-baked. It doesn’t matter what kind of potatoes the fries are made from, I try not to fry them in oil. I have been doing this for several good years now and at this point it is probably a matter of habit. I started baking the fries in an oven, not frying them, mainly due to health reasons. The less fried food, the better, although I do not always manage to avoid it completely, but at least I try to limit it.
Fries can be prepared from regular potatoes or from sweet potatoes. I really like making fries from sweet potatoes. I start preparing the sweet potato fries by peeling, then slicing the potatoes. What some people do is soaking the sliced potatoes in cold water, but I don’t do that because I don’t see any difference in the fries prepared in such a way. Next, I sprinkle the fries with corn starch, which makes the crust of the fries crispy, and in a later step I drizzle them with oil as well. I put the fries on a baking tray and bake them in a very hot oven, turning them over once while baking.
Baked sweet potato fries taste great when sprinkled with herbs or served with your favourite sauce. You can use ketchup, mayonnaise, chili sauce or cheese sauce. Herbs that go well with sweet potatoes include thyme, paprika, and rosemary.

Ingredients for sweet potato fries.
- 700 g sweet potatoes
- 2 teaspoons of corn starch
- 1 teaspoon of smoky chipotle chili
- 1 teaspoon of Himalayan salt
- 2 tablespoons of sunflower oil
How to make sweet potato fries.
Peel the potatoes, wash and dry them with a paper towel and cut them into 1 by 1 centimetre wide strips. Pour the corn starch into a bowl, add the fries and mix. Then sprinkle the whole thing with oil, mix it with your fingers and put on a baking tray lined with baking paper. Place the fries side by side – they should not be too dense so that they can easily be turned over. Next, put the tray in an oven preheated to 210-215 degrees Celsius for about 40 minutes. After 20 minutes, turn them over. Sprinkle the baked fries with chili flakes and sprinkle with salt.

After slicing the potatoes into strips, I did not give their ends a straight shape. If you want better looking fries with less burnt ends, even each end of the fries with a knife.
Chili pepper is not a mandatory addition, but it is worth using it, because it gives the fries a slightly spicy taste.
