Regardless of whether someone likes to cook simple, lightly seasoned vegetarian dishes or hearty, full of spices and fat delicacies, frying in a pan gives you this opportunity. Preparing stir fry takes less than 30 minutes from start to finish, which is undoubtedly an advantage of this easy dish. This dish can be made in advance, prepared for lunch, dinner or frozen for later.

The recipe for chicken stir fry with vegetables is my suggestion for a dish fried in a pan. In addition to poultry, this dish includes vegetables such as onion, carrot, mushrooms and broccoli. It also has to have spices, including chili sauce and soy sauce. I focus on dried Chinese Mun mushrooms (ear mushrooms) in this recipe. These mushrooms are one of the most popular mushrooms used in Chinese cuisine, and in the several stir fry dishes I have tried so far, these mushrooms were one of the ingredients. Ingredients for stir fry with chicken and vegetables.

  • 50 g dry Mun mushrooms (black fungus)
  • water to soak the mushrooms
  • 250 g broccoli
  • 150 g carrot
  • 1 clove of garlic
  • 2 tablespoons of olive oil
  • 100 g onion
  • 450 g chicken drumstick fillets
  • 600 g cooked rice noodles

Sauce:

  • 3/4 teaspoon of salt
  • 1,5 tablespoon of chilli sauce
  • 4 tablespoons of soy sauce
  • 2 teaspoon of brown sugar

How to make stir fry with chicken and vegetables.

Place the dried Mun mushrooms in a bowl, cover with cold water and leave to soak for 2 hours. Then, remove from water and cut into smaller pieces.

Pour olive oil into a wok pan, add the meat cut into strips and fry over high heat for 2-3 minutes. Next, add the onion, cut into strips or slices, and fry for a minute. Afterwards, add mashed garlic and continue frying for 30 seconds. Next, add the carrots, cut into slices, and fry for 2 minutes. In the next step, add the mushrooms, cut into smaller pieces, and the broccoli florets. Fry for 2-3 minutes. Add the brown sugar, salt, soy sauce and chilli sauce to the frying ingredients. Stir occasionally and fry for about 1-2 minutes. Then add the cooked pasta, mix thoroughly, keeping everything on the heat for 30 seconds.
