Chicken in tarragon and mustard sauce
Recently, while shopping on an international food shelf, I came across some French mustard with tarragon. I like tarragon and I mainly use it to flavour meat soups or stews, but I had never eaten it in mustard before, so I bought a jar.
When I got home, I started wondering what I could use my new purchase for. My first thought was chicken sauce with mustard and tarragon. As they say, the first thought is always the best so without thinking any further I started making the dish 🙂

Ingredients for chicken in tarragon and mustard sauce.
- 120 g forest mushrooms
- 1 tablespoon of butter
- 2 shallots
- 300 ml cream (36%)
- 400 g chicken breast
- 1 teaspoon of salt
- black pepper to taste
- 2 tablespoons of French mustard with addition of tarragon
How to make chicken in tarragon and mustard sauce.
Peel the onion, dice it into small cubes and put it in a pot. Add butter and sliced mushrooms to it. Fry it over a low heat until the mushrooms are slightly soft – this should take about four minutes. After that, add the chicken breasts cut into medium-sized cubes and continue cooking for five minutes. Finally, add cream, salt, pepper and mustard. Simmer for an additional ten minutes, stirring occasionally.
Serve the dish with rice, groats or pasta.

Good to know when making chicken in mustard sauce.
I used a mixture of forest mushrooms – you can buy such a mix it in stores. However, if you prefer regular mushrooms, you can use those without any problems.
If you can’t buy tarragon mustard anywhere, try making it yourself at home. You will need a delicate and creamy mustard as a base and preferably fresh tarragon. Stir and refrigerate at least overnight.
You can replace chicken meat with turkey.
