Yoghurt ice cream with sour cherries
The biggest advantage of home-made ice cream is the ability to choose the products from which they are made. As I do not eat lactose and I always choose lactose-free products, home-made ice cream is perfect for me. Another advantage is that I have the option of using less sugar, because I do not like too sweet desserts.
All the products I used to make the ice cream in the the recipe below were lactose-free. If you have lactose intolerance, go for products without lactose. Currently, stores offer a whole range of cheeses, yoghurts and milk that are lactose-free, you just need to find the chains with the best selection. They are a bit more expensive but worth buying.

Ingredients for yoghurt ice cream with sour cherries.
- 300 g pitted sour cherries
- 5 tablespoons of honey
- 400 g Greek yoghurt
- 300 ml heavy cream (36%)
How to make yoghurt ice cream with sour cherries.
Put the washed and pitted cherries into a plastic container, add honey, then mix and put it in the fridge for 2 hours. After that, blend the cherries. I don’t mix them into a homogeneous mass, I like to get small pieces of cherry in the ice cream.
Whisk the cold cream until stiff. then, add cold Greek yogurt and 2/3 of the blended cherries. Mix. Add the remaining part of the cherries to the mixed mass, just mix it slightly, then pour it into a plastic container and put it in the freezer for at least 10 hours.

If you don’t have Greek yoghurt, use plain one. However, I recommend Greek yogurt because it has a thicker consistency and a more distinct flavour.
I didn’t add too much honey when making the ice cream. I prefer to taste the yoghurt and the cherries rather than the sweetness of honey. But if you’re not like me, just increase the amount of honey.
If you freeze the ice cream in a plastic container, it is worth stirring the freezing mass from time to time. The first stirring can be done for after 2 hours of placing the container in the freezer, then again after another 2 hours.
If you use an ice cream maker, mix all the cherries with whipped cream and yoghurt right away.
