This is a coffee-intensive cake, because both the sponge cake and the cream contain a large amount of coffee. Due to its delicious taste, this cake is perfect for celebrations such as birthdays or name days. As the preparation of the Kawuś cake takes some time, it is worth spreading out the whole process over time and, for example, on the first day, bake the sponge cake, and on the second day, prepare the coffee cream and assemble the cake. Ingredients for Kawuś coffee cake with blueberries.
Coffee-cocoa sponge:
- 80 g cake flour
- 4 medium eggs
- 3/4 teaspoon of baking powder
- 120 g crystal sugar
- 20 g dark cocoa
- 10 g instant coffee powder
- 30 g sunflower oil
Cake soak:
- 3 tablespoons of strong coffee (espresso)
- 1 tablespoon of whiskey
- 3 tablespoons of boiled, cooled water
- 1 tablespoon of powdered sugar
Coffee cream:
- 500 g mascarpone cheese
- 200 ml whipping cream (30% or 36%)
- 10 g instant coffee powder
- 80 g powdered sugar
- 80 ml boiled, cooled water
- 10 g gelatine powder
Additionally:
- 2 blueberry jellies in powder (72 g each)
- 700 ml boiling water
- 200 g fresh or frozen blueberries

How to make Kawuś coffee cake with blueberries.
Preparation of coffee-cocoa sponge cake.
Pour the egg whites into a mixer bowl and whisk them for about a minute or until they become foamy. Next, add the crystal sugar, not all at once, but in two or three batches. Then, add the egg yolks, again not all at once, but in batches as well. After that, pour in the oil, and whisk for a moment. Finally, in smaller quantities, add the dry ingredients sifted through a sieve and mix them with a spoon or spatula. Pour the batter onto a baking tray lined with baking paper, spread it thoroughly and level it out. Place the baking tray with the cake batter in the oven preheated to 180 degrees Celsius for 20 minutes. After removing it from the oven, let the cake cool down, take it out of the baking tray, remove the baking paper, turn the cake over, place it on the baking paper and put it back into the baking tray.
Making coffee cream, soaking punch and preparing jelly.
Pour whiskey, powdered sugar, water and coffee into a glass or jug, mix, then pour into a bottle and intensively soak the sponge cake with it. Pour gelatine powder, coffee powder and cold water into a small bowl. Mix and set it aside for 10 minutes, then put it in the microwave for 20 seconds. After taking it out, let it cool down.
Pour the cold whipping cream into a large bowl, and whisk it for about 30 seconds. Next, add powdered sugar and continue whipping until the cream begins to thicken, then add mascarpone and continue whipping for a moment. At the end of whipping, add cold coffee and beat for a while until the cream becomes quite thick. Pour the coffee cream onto the previously soaked sponge cake, spread it evenly and level it out. Place the cake with the cream on it in the refrigerator for at least 30 minutes or until the jelly begins to set. Combine the powdered jelly with boiling water in a large bowl and stir until the jelly dissolves completely. Put it aside to set.
Take the cake out of the fridge, arrange the blueberries on the top of the cream and pour the thickening jelly over them. Put the assembled cake back in the fridge, this time for at least 3 hours, so that the jelly thickens completely. Before serving, keep the cake in the refrigerator.

Good to know when making Kawuś coffee cake with blueberries.
I prepared the cake in a rectangular metal baking tray measuring 22 by 28 centimetres. You can place the cake in the baking tray in which it is baked, or in a rim. If you place the cake in a baking tray, it is worth fastening the sides of the baking paper with staples or clips.
