Bread with asparagus
Bread with green asparagus and goat cheese is one of my last bakes in which I used asparagus. Moist, with a crispy crust and an original taste, this bread is a great base for sandwiches, and at the same time tastes delicious served as an addition to soups, stews and snacks. The basis of asparagus bread is bread flour, water, yeast, olive oil, salt, sugar, soft goat cheese and green asparagus cut into small slices. After combining all the ingredients, you knead the dough and when it is ready, set it aside to rise. Place the risen dough in a baking tray, sprinkle with grated goat cheese and leave to rise again. When ready, bake at high temperature for less than 30 minutes. After baking, let the bread cool for a while, remove it from the baking tray and continue cooling on a metal rack. Ingredients for bread with asparagus.
- 150 g green asparagus
- 100 g soft goat cheese
- 5 g instant yeast
- 400 g bread flour
- 250 g lukewarm water
- 2 tablespoons of olive oil
- 3/4 teaspoon of salt
- 1 teaspoon of crystal sugar
Additionally:
- 3 tablespoons of grated goat cheese

How to make bread with asparagus.
Cut the washed and dried green asparagus into thin slices.
Pour lukewarm water into a large bowl, add crystal sugar, instant yeast and 2 tablespoons of bread flour, mix and set it aside for 10 minutes. Next, add the remaining flour, salt, olive oil. First, mix the ingredients with a spoon, then start kneading the dough with your hand. Work on the dough for about 2-3 minutes, then add soft goat cheese and continue kneading for another 2-3 minutes. Finally, add the sliced green asparagus and knead for another 2 minutes. Cover the bowl with the dough with a kitchen cloth and leave it for 1.5 hours in a warm place to rise. Place the risen dough on a baking tray lined with baking paper, spread it evenly and sprinkle with grated goat cheese. Cover the baking tray with the dough with a cloth and leave it to rise for 40 minutes. Place the risen dough in an oven preheated to 210 degrees Celsius and bake for 28 minutes.

Good to know when making bread with asparagus.
I baked the bread in a rectangular metal baking tray measuring 11 by 30 centimetres.
The instant yeast can be replaced with fresh yeast. In that case, you should use 10 grams of it.
When placing the risen dough on a baking tray, you can grease your hands with olive oil, which will make it easier to level the dough and it will not stick.
The hard, stringy part at the base of the asparagus should be removed. The weight of asparagus I provided in the ingredients is the weight after the removal of its stringy part.
