Ingredients for chicken in parmesan.
- 2 big breasts of chicken (around 550 g)
- 50 g grated parmesan cheese
- 100 g breadcrumbs
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 tablespoons of flour
- 2 small eggs
- 5-6 tablespoons of ghee or clarified butter
- 1 tablespoon of Italian herbs
To serve:
- grated parmesan cheese
- lemon juice

How to make chicken in parmesan.
Cut the cleaned, washed and dried chicken breasts in half lengthwise. Place the meat on a kitchen board, cover with cling film and pound it on both sides with a meat mallet. Pour flour, pepper, salt and Italian herbs onto a plate. Mix it. Next, coat each piece of meat in flour and spices, then pour the beaten eggs with a fork into the remaining flour and mix it. Put the breadcrumbs and finely grated parmesan cheese onto a separate plate and mix it.
Dip the floured meat in eggs combined with flour, then in breadcrumbs combined with parmesan cheese. Put the ghee butter into a pan, melt it and heat it up. Place the breaded poultry meat in the hot butter and fry it over a medium heat for about 6-7 minutes, on both sides. Remove the fried meat to a plate lined with a paper towel. Serve the chicken in parmesan, additionally sprinkled with grated parmesan and drizzled with lemon juice.
