  • 3 large eggs
  • 200 g buttermilk
  • 280 g all-purpose flour
  • 3/4 teaspoon of soda bicarbonate
  • 150 g powdered sugar
  • 1 teaspoon of baking powder
  • 150 g soft butter (unsalted)
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 500 g yellow transparent apples

Cinnamon crumble:

  • 80 g all-purpose flour
  • 60 g light brown sugar
  • 50 g soft butter
  • 3/4 teaspoon of ground cinnamon

How to make a cake with yellow transparent apple and cinnamon crumble.

Cut the washed, pat-dried apples into quarters, then remove the cores (do not peel the apples). Cut the apple pieces into slices.

Cinnamon crumble.

Add brown sugar, cinnamon, sifted all-purpose flour, and softened butter into a bowl. Mix the ingredients with your fingers until they begin to combine.

Buttermilk cake.

In the bowl of a stand mixer or a large pastry bowl, add the softened butter, powdered sugar, and beat for about 5 minutes, until the mixture is light, fluffy, and almost white. Then, mixing constantly, add the eggs, one at a time, not all at once.

The next step is to add the buttermilk, followed immediately by vanilla extract, which will enhance the cake’s flavour. Sift the all-purpose flour, baking powder, baking soda, and salt into the wet ingredients. Mix briefly but thoroughly with a kitchen mixer. After turning off the mixer, stir the mixture with a spoon to ensure everything is evenly combined and there are no lumps.

Pour the prepared buttermilk mixture into a baking tin lined with baking paper and spread evenly. Arrange the sliced apples on top, then sprinkle with cinnamon crumble, which will add a unique aroma to the baked cake.

Place the baking tin with the cake batter in an oven preheated to 180 degrees Celsius (top-bottom baking option) and bake for about 45 minutes, until the top is golden brown and the centre is well baked.
