This homemade graham rolls based on two types of flour: graham and bread flour. I encourage you to prepare this baked product. The rolls come out fluffy, light and have a delicious taste. They are great not only as a base for sandwiches but also as an addition to soups. Great for breakfast, dinner and as a snack.

I start preparing graham rolls by making the yeast leaven, which I do by using fresh yeast, flour, sugar and water. I leave the leaven to rise and when ready, I combine it with flour, oil and salt. I knead the yeast dough for the rolls for about 12 minutes and then leave it to rise for over an hour. After that time, I divide it into eight parts, form the rolls and set them aside to rise. Ingredients for graham rolls.

  • 400 g graham flour
  • 200 g bread flour
  • 30 g fresh yeast
  • 15 g crystal sugar
  • 12 g salt
  • 450 ml lukewarm water
  • 20 ml oil


  • 1 teaspoon of oil for greasing the hands
  • 2 tablespoons of milk (2,8 %) to brush the rolls

How to make graham rolls.

Crumble fresh yeast into a bowl, add crystal sugar, lukewarm water and mix. Next, add 4-5 tablespoons of bread flour removed from the total and mix for a moment with a spoon or a hand whisk to get rid of any lumps. Set the leaven aside for 15 minutes to rise.

Pour graham flour, remaining bread flour, salt, oil and the risen leaven into the bowl of a kitchen mixer. Knead the dough using the mixer with a hook attachment for 12-15 minutes. Next, cover the bowl with the dough with food foil, place a kitchen cloth on it, and then put the bowl with the dough in a warm place for 1-1.5 hours for the dough to rise.

Place the risen dough on a lightly oiled countertop, knead for a while and then divide into 8 equal pieces. Form each piece of dough into a ball, then place it on a metal tray lined with baking paper and leave to rise for about 40 minutes. Brush the risen rolls with milk, then place the tray with the rolls in an oven preheated to 200 degrees Celsius for 20 minutes. Place the baked rolls on a wire rack and let them cool.

The fresh yeast can be replaced with instant yeast. You should use 8 g of it.
