Cottage cheese bread with flax seeds
This high-protein cottage cheese bread with flax seed and oat flakes is an idea for homemade bread with fantastic flavour and nutritional value. It’s gluten-free, containing no flour. Made with just a few ingredients, this bread is based on semi-fat cottage cheese, a generous amount of flax seeds, and oats. Oats should not contain gluten, but to be 100% sure, choose oats labelled gluten-free.
Another advantage of this bread is the lack of yeast, so people who avoid it will certainly like this bread.
The bread dough is essentially a mixture of cottage cheese and oats, which should be thoroughly combined with eggs, flax seeds, salt, baking powder, and baking soda. The ingredients simply need to be kneaded by hand; there’s no need to mix them manually. Mixing and combining the ingredients takes literally 2-3 minutes, after which the mixture is poured into a baking tin and the bread goes into the oven, where it bakes until golden brown. After baking and cooling, the bread can be sliced.
This bread is moist, has an interesting flavour, and a crispy crust. It’s delicious for breakfast, dinner, or as a base for lunch sandwiches.

How to make cottage cheese bread with flax seeds.
Place crumbled cottage cheese in a bowl, add oat flakes, eggs, flax seeds, salt, baking soda, and baking powder. Stir briefly with a spoon to combine the ingredients, then knead well by hand. Transfer the bread mixture to a metal baking sheet lined with baking paper, smooth it out, and lightly press it down with your hand. Bake in an oven preheated to 190 degrees Celsius (350 degrees Fahrenheit) for approximately 40 minutes, or until golden brown. Remove the baked loaf from the oven, let it cool for 15 minutes, then remove it from the baking sheet and continue cooling on a wire rack.
