New potatoes and cucumber salad
Potato salad is a dish that has many variations. Starting with the simplest version of this salad based only on potatoes and a bit of dressing, ending with its more sophisticated versions, containing meat or cold cuts. One of my favourite types of potato salad is the one that Austrians serve with fried meat: the Austrian potato salad. In my opinion, this particular version of potato salad works best served as a side dish.
However, there are also versions of potato salad that taste best served as an individual dish. These include new potatoes and cucumber salad. In addition to potatoes and fresh green cucumber, this salad also contains red onion, hard-boiled eggs and a large amount of fresh herbs. The whole thing is drizzled with a simple dressing of mayonnaise, sour cream and mustard. Ingredients for new potatoes and cucumber salad.
- 500 g new potatoes
- 4 hard-boiled eggs
- a medium-sized bunch a dill
- a medium-sized bunch of green onion
- 2 green cucumbers (200 g)
- 1/2 of big red onion
Salad dressing:
- 3 tablespoons of mayonnaise
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 3 tablespoons of sour cream
- 1/2 teaspoon of sweet paprika powder
- 1 tablespoon of grainy mustard
- 1 tablespoon of red wine vinegar

How to make new potatoes and cucumber salad.
Cut the peeled red onion, and the peeled green cucumbers into small cubes, and the cooked and cooled potatoes into large cubes. Finely chop the green onion and dill. Cut the cooled eggs into fairly large cubes.
Combine the chopped vegetables and all the dressing ingredients in a large bowl. Mix thoroughly. Store the finished salad in the fridge before serving.

Good to know when making new potatoes and cucumber salad.
I boil the eggs for 9 minutes. I boil new potatoes for 22-25 minutes from the moment the water starts boiling. The cooking time of the potatoes depends on their size. I boil the potatoes in their skins and the only thing I do is wash them thoroughly before cooking.
