These cinnamon cookies are crunchy on the outside and soft on the inside. This recipe for cinnamon cookies is very simple, their preparation is quick and easy. To make cinnamon cookies, you will need ground cinnamon, softened butter, flour, egg and two types of sugar: white and brown. Combine the ingredients and shape the dough into small balls then coat them in a sugar and cinnamon sprinkle. You can easily make these cookies in 25 minutes, including the baking time.

Ingredients for cinnamon cookies.

  • 1 teaspoon of cinnamon
  • 150 g light brown sugar
  • 150 g soft, unsalted butter
  • 1 egg
  • 1/2 teaspoon of soda
  • 1/2 teaspoon of baking powder
  • a pinch of salt
  • 100 g crystal sugar
  • 250 g all-purpose flour

Cinnamon sprinkle:

  • 1 teaspoon of cinnamon
  • 2 tablespoons of light brown sugar
  • 2 tablespoons of crystal sugar

How to make cinnamon cookies.

Cinnamon sprinkle: combine cinnamon with crystal and brown sugar in a bowl.

Put soft butter, a pinch of salt, crystal and brown sugar into a bowl. Rub for 3-4 minutes to allow the butter integrate slightly with the sugar. Then add egg, sifted flour, cinnamon, baking soda and baking powder. Mix the ingredients, then quickly knead the dough. Divide the dough into balls of about 30 grams each. Coat each ball with the sprinkle and place them on a baking tray lined with baking paper. Next, gently flatten the cookie balls with your hand so that each ball has a diameter of about 5 centimetres. Put the tray in an oven preheated to 180 degrees Celsius for 15 minutes. Once baked, remove the cookies from the oven and let them set aside for at least 10 minutes to cool.

Good to know when making cinnamon cookies.

When placing the cookies on a baking try, keep a fairly big distance between them. During baking, the size of the cookies will increase and if they are placed too close to each other, they will stick together and you don’t want that.

The cookies should be ready after 15 minutes. However, if you see that they are still not slightly golden on the top, leave them for an additional 2 minutes. It really depends on the oven you have at home. In mine, the cookies were baked in 15 minutes.
