Sweet pastry combs with marmalade

Sweet pastry combs are sweet treats that everyone loves. These combs are big, shortbread cookies with a funny shape. The combs are made from shortcrust yeast dough pastry and filled with marmalade or jam. Once baked, the combs can be easily frozen, because freezing them does not change their taste or texture at all.

Ingredients for sweet marmalade combs.

  • 350 g all-purpose flour
  • 250 g margarine
  • 3 egg yolks
  • 30 g fresh yeast
  • 4 tablespoons of sour cream
  • rose marmalade
  • crystal sugar for sprinkling the sweet combs
  • egg whites for brushing the sweet combs

How to make sweet combs with marmalade.

Sift the flour onto a pastry board and add the diced margarine. Chop the ingredients with a knife until they start coming together. Make a small well in the center of the flour and margarine mix. Pour in the yeast combined with cream into the well and add the egg yolks. Knead the dough. Place the finished dough in the fridge for 30 minutes.

After that time, remove the dough from the refrigerator, roll it out to a thickness of 4-5 millimetres. If the dough sticks to the board, sprinkle it with some flour. Divide the rolled out dough into 10 cm wide strips. In the middle of each strip, spread a line of marmalade along its entire length. Join the edges of the strip together so that the marmalade is in the middle. Cut the strips into 6-7 centimetre long combs. Cut each comb (part without marmalade) with a knife in several places, brush with an egg white and sprinkle with sugar. The combs can be gently bent in the middle to have a slightly bended shape. Leave the combs to rise in a warm place for 10 minutes.

Place the raised combs on a baking sheet lined with baking paper, then put in an oven preheated to 180 degrees Celsius. Bake until golden brown.

How to make sweet combs with marmalade.

You can replace the rose marmalade with any marmalade of your choice.

The combs can also be left to rise when they are already placed on the baking tray and then you do not need to transfer them later.

The harder the marmalade you use, the better. If you select jam, it may come out of the combs during baking. Therefore, personally, I would recommend using marmalade not jam.

The combs should be baked for around 20-25 minutes.
