Zucchini and Parmesan salad
A light salad of raw zucchini with the addition of Parmesan cheese and pine nuts: this is my suggestion for a quick dinner salad, or for other meals. I like to prepare this salad mostly during the summer, when I can go for the zucchini from my home garden. This zucchini salad can be served as an addition to meat or served by itself as a main course. It works well with grilled or roasted poultry and other grilled meat, so I recommend it in for when you are looking for an idea for a barbecue salad.
Preparing a zucchini salad is really simple, and the only hard work that awaits you is slicing the zucchini. I suggest you do this with a vegetable cutter, because when you cut zucchini with a knife, it will be very difficult to get those thin zucchini ribbons. And they must be really thin, otherwise they will be hard to marinate, which will result in them being too hard in the salad and they won’t curl nicely. Marinate the sliced zucchini in a marinade of olive oil, lemon juice and salt so that it softens and takes on the flavour. After marinating, serve the zucchini with cheese and pine nuts. Ingredients for zucchini and Parmesan salad.
- 400 g zucchini
- 1/2 teaspoon of salt
- 3 tablespoons of olive oil
- a pinch of colourful pepper
- 50 g pine nuts
- 2 tablespoons of lemon juice
- 50 g Parmesan cheese
How to make zucchini and Parmesan salad.
Wash the zucchini, dry it and cut it into very thin ribbons, preferably with a vegetable mandolin. Put the chopped zucchini into a bowl, add salt, olive oil and lemon juice. Mix and set aside for 15 minutes. Then add the coloured pepper and sprinkle it with pine nuts and Parmesan cheese.

Good to know when making zucchini and Parmesan salad.
Young, small or medium-sized zucchini will work best in this salad. They have a soft skin and do not contain seeds.
If the zucchini releases a lot of juice after marinating, pour out the excess liquid before adding cheese and peanuts to it.
The pine nuts can be replaced with walnuts or cashew nuts.
