If you have big amounts of pepper at home and are not sure what to make from them, there are a few dishes you might consider.

First of all, if you have a lot of peppers, you should definitely marinate them or add them to other vegetables and make a winter salad.

However, if the amount of pepper you have is sufficient for current use only, you still have several options for other dishes.

You can even opt for a soup, omelette or stuffed pepper.

Of course, not all peppers are suitable for stuffing. I cannot imagine stuffing chili peppers. Not only it is small but also very spicy. The best for stuffing are big species of pepper, such as bell and banana. I used red bell peppers. You can also get this variety in green and yellow.

Ingredients for stuffed peppers.

  • 4 big red peppers
  • 2 medium-sized red onions
  • 150 g feta cheese
  • 4 tablespoons of cheese e.g. Gouda
  • 1/6 teaspoon of pepper
  • 1 tablespoon of olive oil
  • 1/4 teaspoon of salt

How to make stuffed peppers.

Wash the peppers, dry them, cut them lengthwise and remove the seeds. In total, use three peppers to stuff. Cut the fourth one into strips, put it in a pan and add chopped onion and olive oil. Fry over a medium heat for 4 minutes. At the end of frying, add salt and pepper. Let the fried vegetables cool down.

Combine crushed feta cheese, grated cheese, and the fried and cold vegetables in a bowl.

Fill the bell pepper halves with the stuffing. Place the stuffed peppers on a baking sheet lined with baking paper and put them in an oven preheated to 175 degrees Celsius for 50 minutes.

Serve the baked peppers as a starter or as an addition to other dishes.

I did not add a lot of salt to the stuffing because the feta cheese is salty, and by adding salt it is easy to over-salt the stuffing.

You can replace the red onion with shallots. I would not use any other type of onion other than the mentioned two types, as other ones tend to taste quite intense.
