Sweet and sour sauce
Sweet and sour sauce originates from China, but currently, its various versions can also be found in other cuisines, including American and Thai. The Chinese version of this sauce is based on sugar, vinegar, often soy sauce and spices such as ginger. In the enriched version, typical of Western countries, this sauce includes tomato paste or ketchup and fruit juice, which is most often pineapple juice. This easy-to-make sauce is a great addition to ribs, pork, breaded chicken, spring rolls, rice noodles with meat and vegetables, shrimp and many other dishes. It can be served as an addition or used as one of the ingredients when making a specific dish.
The preparation of the sweet and sour sauce takes a little over 10 minutes and starts with combining most of the ingredients, cooking them on low heat for a while, and finally thickening them with cornflour mixed with water. Cook together for a while and that’s it, the sauce is ready. You can serve it immediately when it’s hot, or you can let it cool first. The cold sauce is great as an addition, while the hot sauce works well when added as an ingredient, for example to noodles with pork. Ingredient for sweet and sour sauce.
- 250 ml pineapple juice
- 15 g corn flour
- 100 g light brown sugar
- 30 g rice vinegar
- 80 g ketchup
- 20 g soy sauce
- 20 g water

How to make sweet and sour sauce.
Pour pineapple juice, rice vinegar, soy sauce, ketchup and brown sugar into a pot. Mix the ingredients with a hand whisk, then bring them to a boil and simmer on low heat for 4-5 minutes, stirring occasionally. In a small bowl, combine cornflour and water, and when ready, pour it into the boiling ingredients in the pot, mix them quickly and bring it to a boil again. From the moment of boiling, simmer on low heat for 5-6 minutes, stirring quite often. Remove the finished sauce from the heat, cover it with cling film, arranging it in a way that it adheres to the sauce. Set it aside to cool and when cold, put it in the fridge.
