The Polish version of stroganoff comes from the Boeuf Stroganoff dish. The first part of the name means beef in French, while the second part comes from the surname of a Russian general. Originally, stroganoff is a sirloin fried and served with a sauce. Mushrooms, onions and pickled cucumbers are used as additions.

My recipe for stroganoff is a bit more extensive, because in addition to the basic ingredients, I also used few others. For example, I added frankfurters, without which I personally cannot imagine this dish. Make it at home, I hope you will like this version of stroganoff.

Ingredients for stroganoff.

  • 800 g beef sirloin
  • 2 teaspoons of sweet paprika powder
  • 1 teaspoon of spicy paprika powder
  • 2 medium-sized onions
  • 3 big carrots
  • 3 medium-sized red peppers
  • 5 Frankfurter sausages
  • 500 g mushrooms
  • 4 medium-sized pickled cucumbers
  • 2 flat tablespoons of salt
  • 1/2 teaspoon of black pepper
  • 1.5 tablespoons of potato flour
  • 3 bay leaves
  • 2 flat tablespoons of tomato puree
  • 2.5 l water

How to make stroganoff.

Dice the beef into medium-sized cubes and put it in a pot. Fry over a high heat for 4-5 minutes, until the juice is evaporated and the meat starts browning. At that point, add the paprika, bay leaves and diced onion. Fry for 3 minutes and add sliced mushrooms, sliced carrots and diced pickled cucumbers. Pour in two litres of water, bring it to boil, reduce the heat and simmer over a low heat for 1.5 hours.

Next, add sliced frankfurters, sliced red pepper and black pepper to the cooking ingredients. Continue cooking until the beef is tender. When the meat is tender, add salt. Mix 0.5 litres of water with potato flour and tomato puree in a cup. Pour the mixture into the ingredients in the pot. Bring it to boil and continue cooking for an additional five minutes.

Serve the dish hot with bread.

Good to know when making stroganoff.

I used pickled cucumbers, which I had peeled before adding them to the stroganoff. A few times in the past I made stroganoff with gherkins and they also worked well in this dish.

I used fresh red pepper. You can use pickled peppers if you prefer those. If you are tempted to do so, remember to add those at the very end, otherwise they will get completely overcooked.
