White cauliflower soup with a twist
I love soups.
At home dinner always consisted of two dishes, soup and a main dish.
However, the soups my mom cooked were not the creamy ones, even though I love those.
These soups were made with large amounts of vegetables, often with some meat added to it and the ingredients were cut into large chunks, most of the time not blended.
These days I still prefer creamy soups. Sometimes, however I cook traditional soups, those ones that not need blending.

Ingredients for cauliflower soup.
- 1 and 1/2 liter of water
- 1 small onion
- 1 medium cauliflower
- 1 spoon of butter
- 1 small celeriac
- 2 small parsley
- 1 apple (sour type)
- 1/4 teaspoon of white pepper
- 2 medium potatoes
- 3 spoons of double cream
How to prepare cauliflower soup with a twist.
All ingredients cut into large chunks. Put them in a pot, pour water on them and add salt and pepper. Cook for 30 minutes over a low heat. After this time, add the cream and blend it. At the end boil the soup. Serve with fresh baguette. Delicious.

Good to know when making soup from cauliflower.
When cooking the vegetables the cauliflower can be added a few minutes later than the others as it requires less time.
