Pasta, which is a combination of flour, water and eggs, is a product that has all kinds of uses in the kitchen. You can find it in soups, salads and, of course, in main courses, as the leading ingredient.

A whole range of pasta is available on the market. You can choose the shape, taste or type of pasta. The pasta can be made from flour, rice or corn flour. Those who cannot digest gluten will find a very large selection of gluten-free pasta as well.

I don’t know about you, but I use pasta often. Mostly, I make spaghetti carbonara, which my husband loves. I also often serve dishes based on rice noodles. Most often these are seafood or chicken dishes.

When I want to prepare a quick salad, I go for pasta. For the salad in the recipe below, I used mini fusilli pasta. The salad also includes cocktail tomatoes, spinach and pine nuts. I seasoned the salad with a sauce based on olive oil, which is not as heavy as a mayonnaise-based sauce.

Ingredients for pasta salad with tomatoes and spinach.

  • 80 g fresh spinach
  • 50 g roasted pine nuts
  • 150 g Fusilli pasta
  • 1 teaspoon of salt
  • 100 g mini mozzarella bowls
  • 15 yellow cocktail tomatoes
  • 10 red cocktail tomatoes
  • 1 big clove of garlic
  • 4 tablespoons of olive oil
  • 3 tablespoons of grated Parmesan cheese
  • 5 halves of sun-dried tomatoes in olive oil brine
  • pinch of salt

How to make pasta salad with tomatoes and spinach.

Boil the pasta in water salted with 1 teaspoon of salt. Cook it according to the instruction on its package. Pour the cooked pasta into a colander, pour in cold water and cool it down.

Put the pine nuts in a pan and roast on a very low heat for a few minutes. The peanuts should get a slightly golden colour.

Cut the cocktail tomatoes into halves or quarters (depending on the size of the tomatoes). Cut the mini mozzarella balls into slices. Cut the sun-dried tomatoes into small pieces.

Combine the olive oil, a pinch of salt, mashed garlic and finely grated Parmesan cheese in a cup.

Put the cooked pasta, roasted peanuts, cocktail tomatoes, sun-dried tomatoes, chopped mozzarella and spinach into a bowl. Pour the sauce from the cup over the ingredients and mix.

The pasta you use for the salad should be al dente. Pasta that is too soft will lose its shape.

The yellow cocktail tomatoes I used turned out to be much smaller than the red ones, so I added more of them.
