Couscous is most often served as an addition to dinner dishes. The simplest way to prepare it is to pour boiling water over it and let it swell for a few minutes. Unfortunately, couscous made in this way can be bland. I think that it is always a good idea to add spices and herbs to such couscous. You can use salt, pepper, a little paprika and herbs to flavour it. For me it tastes best when served with grilled vegetables and fresh herbs.

Last Saturday I was invited to my father-in-law’s birthday. I promised to make a salad. My husband’s family avoids mayonnaise so mayonnaise salads were out of the question. So I made couscous salad with some vegetables, cheese and herbs.

Ingredients for couscous salad.

  • 150 g couscous
  • 200 ml boiling water
  • 200 g feta cheese
  • 30 black olives
  • 2 big handfuls of arugula
  • 12 big cocktail tomatoes
  • 2 green onions
  • 15 leaves of lemon balm
  • 2 tablespoons of olive oil
  • 2 tablespoons of lime juice
  • 1/3 teaspoon of salt

How to make couscous and tomato salad.

Put the couscous and salt to a bowl, pour boiling water over it and stir with a spoon. Then cover with a lid and set it aside to let it cool down.

When the couscous is cold, use a spoon or your hand to separate the couscous grains from each other.

Cut the tomatoes in halves or quarters. Finely chop the green onion. Crush or dice the feta cheese into medium-sized cubes and cut the lemon balm leaves finely.

Combine the couscous, tomatoes, arugula, chopped onion, feta cheese, chopped lemon balm and black olives in a bowl. Combine the olive oil with lime juice in a cup and pour it over the ingredients in a bowl. Mix.

Keep the salad in the fridge before serving.

It is important to use the lemon balm. It has a more delicate flavour than mint and it smells of citrus.
