I am looking forward to the spring. Nothing can replace the taste of fresh lettuce, chives, radishes, parsley or spring onions.
In March, the first pieces from the greenhouse vegetables should already be available in stores. So, I bought a pretty radish last week. I do not know if it is imported because I did not pay attention to it in the store but it tasted very good.
I ate the radish mostly in sandwiches, but I also made a delicious salad from it. The salad was perfect for the roasted chicken legs I served it with.
Ingredients for salad.
- big bunch of radish
- 250 g of cherry tomatoes
- 1 medium-size red onion
- a pinch of salt
- a pinch of black pepper
- 1 tablespoon of apple cider vinegar
How to make radish salad.
Cut the onions into thin slices. Put it in a bowl, add vinegar and mix. Let it stand for 20 minutes.
Wash the radishes and tomatoes, and cut them into quarters. Put it all in a bowl. Add a pinch of salt, a pinch of black pepper and the red onion from the other bowl. Mix. Serve as an addition to other dishes.
Good to know when making radish salad.
For pickling onions, be sure to use apple cider vinegar. It has a delicate taste and goes well with the other ingredients of the salad.
I didn’t add a lot of salt or pepper. I don’t think the vegetables need them. Both the radish and the pickled onion give enough taste of this salad well and sufficiently.
