Romesco sauce
Romesco is a Spanish sauce originating from the region of Catalonia. The base of the sauce is made from tomatoes, peppers and almonds. The sauce is seasoned with olive oil, vinegar and garlic. Romesco sauce is a type of cold sauce, which means that the ingredients are not cooked together, only mixed once they are cold. The ingredients for the sauce can be combined in a skillet or mixed.
Romesco sauce is usually served with seafood and fish, but it can also be served with poultry and vegetables. Below you will find the recipe for romesco sauce, which I made using red roasted peppers and sun-dried tomatoes.

Ingredients for romesco sauce.
- 200 g roasted peppers
- 50 g roasted almond flakes
- 50 g sun-dried tomatoes in olive oil brine
- 1/2 teaspoon of salt
- 1 big clove of garlic
- 1 teaspoon of smoked paprika
- 100 ml of olive oil
- 1 tablespoon of sherry vinegar
How to make romesco sauce.
I prepared the sauce with a blender. Put the chopped peppers and sun-dried tomatoes in a tall dish. Add toasted almond flakes, mashed garlic, salt, smoked paprika, olive oil and sherry vinegar. Blend to a uniform, creamy consistency. Serve the sauce cold.

Good to know when making romesco sauce.
You can also use marinated pepper to prepare the sauce. The marinade, however, should not contain too much vinegar.
I chose sweet, very ripe peppers for baking. I cut each pepper in half then put them on a baking sheet with the skin side up. Before that though, I covered the baking tray with baking paper. I baked the peppers at 200 degrees Celsius for 35 minutes, then cooled them down and used them unpeeled. When baking peppers, you must remember that after baking its their weight will decrease. I got 200 grams of baked pepper from just over 300 grams of raw pepper.
I roasted the almonds on a non-sticky pan. It is enough to put almond flakes into the pan, place the pan on a very low heat and, while stirring occasionally, roast them until the almonds become golden brown.
You can replace the sherry vinegar with red wine vinegar and even lemon juice.
