Puff pastry is a very simple pastry made from flour, butter and water. It is very easy to prepare it, but it is a bit time-consuming. I always make homemade puff pastry in large quantities and freeze it rolled out, wrapped along a greaseproof baking paper. Nowadays, you can buy good quality puff pastry in stores, so if you don’t like or don’t have time to make puff pastry at home, you can simply buy it.

Once you buy or make the puff pastry, you can prepare both sweet and savoury pastries from it. Puff pastry works well in tarts, cookies, casseroles, rolls. As this pastry does not contain sugar, it goes well with fruits, meat, vegetables and fish.

Below, I present you a recipe for puff pastry cookies filled with almond cream. These cookies are sweet. Some time ago, I shared a recipe with you for almond cream, and now I want to show you another dish in which you can use this cream.

Ingredients for puff pastry cookies with almond cream.

  • 600 g puff pastry
  • 400 g almond cream
  • 1 egg
  • icing sugar

How to make puff pastry cookies with almond cream.

Prepare the almond cream according to the recipe HERE.

Place the puff pastry on the countertop, roll it out to a thickness of about two millimetres. Cut 10 cm wide and 30 cm long strips from it. You will make one cookie from two strips of the pastry. Put the first strip of the pastry on the countertop, coat it thoroughly with almond cream, leaving a few millimetres empty along the edges. Beat an egg with a fork, then brush the empty edges of the puff pastry with it.

Next, cover the part with the cream with an empty sheet of the puff pastry. I decided to score the top piece of each cookie with a roller cutter. Press the pastry lightly with your fingers along all the edges so that the upper and lower sheets stick together. Then, using a knife, cut the filled pastry into 4 parts. After cutting, you should get rectangles measuring about 10 by 7 centimetres. Brush each puff pastry cookie with an egg on top and place them on a baking sheet lined with baking paper.

Preheat an oven to 200 degrees Celsius and once hot, put in the baking tray with the cookies. Bake the cookies for 25 to 30 minutes. Once baked, let the cookies cool down and sprinkle them with icing sugar.

Good to know when making puff pastry cookies with almond cream.

The puff pastry with which I covered the almond cream was first scored with a roller cutter, and only then I placed it on the almond cream. If you do not have one, you can cut the pastry with a knife or prick it with a fork in several places.

The size of the cookies that I mentioned in the recipe is just a suggestion. You can prepare both smaller and larger cakes, and even give them a different shape.
