Oven-baked salmon with nut crust
Oven-baked salmon with a nut crust made with pecans, breadcrumbs and butter is a recipe for a simple and easy-to-prepare pescetarian dish. I like making this dish especially on working days, because then the time I can devote to cooking is somewhat limited.
To prepare baked salmon, I start by cleaning and drying the fish, then season it to taste with salt and pepper, and cover it with a mixture of honey, mustard and lemon juice. After that, I sprinkle the fish with nut crumble, breadcrumbs, parsley and butter crumble, which becomes nicely crispy after baking. I bake the salmon at 180 degrees for about 18 minutes, of which the last minutes I do it under the grill, which makes the crumble even crispier. I serve the baked fish almost immediately after removing it from the oven.
Baked salmon with crust proves that dinner can be prepared in 30 minutes and you don’t have to do much to execute it. Ingredients for oven-baked salmon with nut crust.
- 500 g raw salmon with skin on
- 2 tablespoons of liquid honey
- 2 tablespoons of grainy Dijon mustard
- 1 tablespoon of chopped parsley
- 1/4 teaspoon of salt
- a pinch of pepper
- 20 g breadcrumbs
- 40 g pecans
- 1/2 tablespoon of lemon juice
- 1,5 liquid butter

How to make oven-baked salmon with nut crust.
Cut the salmon into five equal pieces, clean it, wash it under running water and pat-dry it with a paper towel.
Mix honey with mustard and lemon juice in a cup. Mix finely chopped pecans, breadcrumbs, finely chopped parsley and liquid butter in a bowl.
Sprinkle the salmon pieces with salt and pepper and place them with the skin-side down on a baking tray. Spread the top of each piece with the liquid ingredients from the cup, then sprinkle with nut crumble. Sprinkle the fish with a little water on top and put it in the oven preheated to 180 degrees Celsius for 18-20 minutes. Use the grill option for the last 2 minutes of baking.

The baking time for salmon depends on the thickness of the pieces you choose. Thinner pieces take less time than slightly thicker ones. The salmon pieces I used were quite thick. You can buy salmon in one piece and portion it yourself at home, or you can buy already portioned fish.
The pecans can be replaced with walnuts, peanuts or hazelnuts.
