Salmon is a popular fish whose meat is rich in protein, omega-3 fatty acids and vitamin D. It is eaten raw as well as boiled, smoked, baked and fried. In my home, I mostly eat smoked salmon, which I usually serve for breakfast. I equally often go for poached salmon, which I also used for the following salad. In this salad, I combined salmon with a mix of salads, quail eggs, avocado and pomegranate seeds. I drizzled the salad with olive oil, lemon juice and fresh dill. Ingredients for poached salmon salad.
- 300 g raw salmon with a skin on
- 6 quail eggs
- 80 g salad mix
- 1 big avocado
- 1/2 pomegranate
- 3 tablespoons of olive oil
- 1/2 teaspoon of Himalayan salt
- 1/4 teaspoon of freshy ground pepper
- 1 tablespoon of lemon juice
- 1 teaspoon of fresh dill
How to make poached salmon salad.
Place the salmon in a cooking pan with its skin side down, add water and cover the pan with a lid. There should be enough water to cover 3/4 of the salmon. Put the pan on the heat, bring the water to a boil and simmer for 10 minutes. Then remove the pan from the heat, drain the water and let the salmon cool down. Place cold salmon on a paper towel to drain excess water. When the salmon is relatively drained, remove the skin and tear the salmon meat into smaller pieces with your fingers.
Cut the avocado in half, remove its pit, then use a spoon to take out the pulp. After that, cut the avocado pulp into cubes and transfer them into a bowl. Remove the seeds from the pomegranate and put them in the bowl as well. Boil the quail eggs in water salted with a pinch of salt. I cooked the eggs for 4 minutes from the moment the water with the eggs started to boil. Allow the boiled eggs to cool down, peel them and cut them in half.
Put a mixture of chopped lettuce, salmon pieces, eggs, avocado and pomegranate seeds into a large bowl. Combine salt, pepper, olive oil, lemon juice and chopped dill in a cup. Pour the dressing from the cup over the ingredients in the bowl.

Good to know when making poached salmon salad.
I used a salad mix in a packet. You can easily buy such a mixture in any store. The salad that is in it is already washed and cut.
You can replace the quail eggs with chicken eggs. If you do that, three chicken eggs will be sufficient.
