Minced meat rolls with olives
Meat rolls are one to use minced meat. In these meat rolls, I combined minced pork with pork loin and green olives. I baked everything in the oven and served it with groats and creamy kohlrabi.
I started preparing the rolls by breaking the pork loin with a meat pestle, seasoning the minced meat, then lining the pork loins with it and arranging the olives in the middle. I folded the whole thing in the shape of small rolls, wrapped it with a thick thread and baked it until the meat became soft. Ingredients for minced meat rolls with olives.
- 1,2 kg of boneless pork loin
- 1 kg pork minced meat
- 30 green olives
- 1 teaspoon of salt + a pinch of salt
- 1/4 teaspoon of black pepper
- 100 g onion
How to make minced meat rolls with olives.
Cut the pork into 10 pieces of equal size. Break each piece with a meat pestle, but be careful not to puncture the meat.
Combine the minced meat with a teaspoon of salt, pepper and finely chopped onion in a bowl. Next, place a small bowl of minced meat on a previously flattened pork loins, taking care not to cover the entire loin with it, but only its middle part. Then, in the center of the meat, place 3 olives next to one another, and roll the meat as if you were making a croquette. First fold the long sides a little towards the center, then roll the meat, starting from one of the short sides. Tie the roll-shaped meat with a thread or a thin string so that the rolls do not fall apart during baking. Sprinkle each roll on top with a little salt, place in an ovenproof dish and cover with aluminium foil or a lid.
Preheat the oven to 190 degrees Celsius, put the dish with the meat in and bake it for an hour. After that time, remove the foil, reduce the temperature to 180 and continue baking for another 15-20 minutes. During baking, you can check the meat with a fork from time to time to see if it is soft.

Good to know when making minced meat rolls with olives.
In this dish, I used large green olives stuffed with paprika. I recommend going for green, large-sized olives, and they do not necessarily have to be stuffed with anything, the most important thing is that they do not have pips and are not too small.
Meat rolls with olives can be served with a sauce, for example tomato sauce. Another way to serve them is for example, with boiled kohlrabi.
