Oyster mushrooms are mushrooms rich in protein, folic acid and vitamins. Its cap resembles an oyster shell. They have a variety of colours and can be found in gray, brown, white, beige, shades of blue and purple. The hats of young oyster mushrooms are soft, while the older ones have a slightly firmer and springy flesh. In the wild, these mushrooms grow in clusters on trees such as willow or poplar, while in cultivation they are grown on straw. Individual specimens can rarely be found, because single pieces of oyster mushroom are fused together in clumps. In the form of clumps, these mushrooms are also most often sold in shops.
Oyster mushrooms can be prepared in many ways. They can be fried, stewed, breaded, pickled and dried. You can find them in sauces, soups, salads, pasta and risotto. The recipe for breaded oyster mushrooms is just one suggestion for using these mushrooms. After dividing it into individual pieces, I dip each oyster mushroom in a batter made from flour, water, egg, and spices such as soy sauce, pepper and salt. The oyster mushrooms then, thoroughly covered with the batter, go to a plate with breadcrumbs, and then to hot oil. I serve the fried mushrooms with my favourite sauce or as an addition to dinner dishes.

Ingredients for breaded oyster mushrooms.
- 200 g oyster mushrooms
- 1 egg “L”
- 1/4 teaspoon of salt
- 1 teaspoon of soy sauce
- 1/4 teaspoon of black pepper
- 150 ml water
- 80 g all-purpose flour
- 100 g breadcrumbs
- oil for frying
How to make breaded oyster mushrooms.
Combine water, flour, egg, salt, soy sauce and pepper in a bowl. Whisk for about a minute, so that there are no lumps in the batter. Put the finished batter aside for 10 minutes.
Pour breadcrumbs on the plate. Soak oyster mushrooms in batter, then roll in breadcrumbs. Pour a large amount of oil into a frying pan and heat it up. When the oil in the pan is hot, reduce the heat to medium and put in the breaded oyster mushrooms. Fry the oyster mushrooms on a medium-high heat for 8-10 minutes or until they are golden brown on all sides. Place the fried mushrooms on a plate lined with a paper towel. Serve the fried oyster mushrooms with ketchup, chili sauce, ajvar, peri-peri sauce or roasted pepper cream.

Good to know when making breaded oyster mushrooms.
Oyster mushroom clusters should be cut and divided into individual pieces, because you coat the individual oyster mushrooms, not clumps.
I do not wash the oyster mushrooms in water, I coat them immediately after separating the individual pieces.
There should be enough oil in the pan, so that the oyster mushrooms can swim freely in it. Instead of a frying pan, you can use a fryer.
