Linzer cookies come from the Austrian city of Linz. They are shortbread butter cookies, in which the dough is made by combining all-purpose flour with almond flour, butter, sugar, cinnamon and lemon zest. The finished dough is rolled out and cookies of various shapes are cut out of it. Most often, the cookies are round-shaped, but the heart shape is also very popular. Once baked, two cookies are joined together with the top one having a hole cut in its center through which the jam can be seen. Ingredients for Linzer cookies.

  • 120 g butter
  • 120 g icing sugar
  • a pinch of salt
  • a pinch of grated lemon zest
  • 200 g all-purpose flour
  • 50 g almond flour
  • 1 small egg
  • 3 drops of vanilla extract
  • 1/6 teaspoon of cinnamon
  • 150 g raspberry jam
  • icing sugar for sprinkling the cookies

How to make Linzer cookies.

Put the soft butter and icing sugar into a bowl and rub it for 5-6 minutes until fluffy and creamy. Next, add the egg, vanilla extract, lemon zest, salt, cinnamon, and both flours sifted through a sieve. Continue rubbing for 2 minutes, then knead the dough. Wrap the finished dough in cling film and put it in the fridge for a minimum of 5 hours.

After removing it from the refrigerator, roll out the dough to a thickness of about half a centimetre. Cut out any shape out of the rolled out dough, remembering that one of the cookies should also have a hole cut in its center. There should be the same amount of cookies without a hole and cookies with a hole, so that after baking you can fold one from each group into one. Place the cookies in the fridge for 10 minutes.

Afterwards, put the cold cookies on a baking tin lined with a baking paper. Put the cookies in an oven preheated to 175 degrees Celsius for 10-11 minutes. Allow the cookies to cool down after baking.

Folding the cookies: spread some raspberry jam on the cookie without a hole, cover it with a cookie with a hole. Sprinkle the cookies with icing sugar on top.

Good to know when making Linzer cookies.

The raspberry jam that you use must not have any seeds in it. If there are seeds in the jam, rub the jam through a fine sieve.

Do not work on the entire batch of dough at once, only work on a part of it. I rolled out the dough between two sheets of baking paper.

I cut out heart-shaped forms from the dough. The metal molds which I used were of medium size.
