Layered salad with chicken
A layered salad is a salad that looks like a cake. Of course, this is not a cake and it hasn’t got a sweet taste. This salad can be made with vegetables, meat, fish – you can switch and swap these ingredients each time you make such a salad. On the other hand, crackers are a permanent element of every layered salad. It is thanks to crackers that the shape of the salad looks like a cake.
When you eat a layered salad, you don’t need any extra bread. It is filling enough due to the presence of crackers in it. In addition, the salad looks very appetising so everyone will want to eat lots of it 🙂

Ingredients for layered salad.
- 600 g chicken breast
- 27 crackers
- 1/2 teaspoon of salt
- 4 eggs
- 1 tablespoon of oil
- 1 teaspoon of herbs de Provence
- 1 medium-sized red onion
- 3 medium-sized gherkins
- 3 tablespoons of sour cream
- 5 tablespoons of mayonnaise
- 1 tablespoon of ketchup
- bunch of chives
How to make layered salad with chicken.
Wash the chicken breasts, dry then dice them into medium size cubes. Pour the oil into a frying pan, place the chicken, herbs de Provence and salt. Fry over a medium heat for a few minutes. The meat should be tender and its excess juices should evaporate. When the meat is fried, cool it down and chop it very finely.
Hard-boil the eggs (8-9 minutes), peel them, then separate the yolks from the egg whites. Grate the egg whites and yolks separately on a fine mesh grater. Add 2 tablespoons of mayonnaise and 1 tablespoon of cream to a bowl with grated egg whites. Mix it. Leave the egg yolks for the moment as they are.
Peel the onion and chop it very finely. Peel the gherkins and grate them on a large mesh grater. Combine the onion, gherkins, chopped chicken, 3 tablespoons of mayonnaise, 2 tablespoons of cream and 1 tablespoon of ketchup. Mix it well.
Assembling the salad: arrange 9 crackers next to one another on a serving board or a serving platter. Cover the crackers with half of the chicken mixture . Put another 9 crackers on it and cover them with another layer of chicken mixture. Place last layer of crackers on it, then spread the egg whites on top of the crackers and sprinkle with grated egg yolks and with finely chopped chives.

Good to know when making layered salad.
Various flavours of crackers can be found in stores. In addition to the standard salted ones, there are crackers with cheese, herbs, sun-dried tomatoes, salt and pepper. I selected those with salt and pepper. For this reason, I did not add any extra pepper to my salad.
After peeling and grating the gherkins, I squeezed the juice lightly out of them. Too much juice will make the crackers soak.
You can replace the chicken meat with tuna, cheese or vegetables such as pepper.
