Kiwi mousse with quinoa
Quinoa is a gluten-free grain from South America. It cooks very quickly and it is easily digestible, which is why more and more people are using it.
So far, I have already prepared dumplings from it – you can find the recipe on the blog. This is my first time using puffed quinoa, before I only used grains. I came across this type of quinoa when shopping at an oriental food store. I grabbed a bag of it from the shelf and thought I might use it at some point.
In this recipe, I combined it with fruit mousse and it worked pretty well. However, I think that it goes nicely with chocolate or caramel as well.

Good to know when making kiwi mousse.
Quinoa is a great addition to joghurt or fruit mousses. Not only are its grains gluten-free, but also they are wonderfully crunchy. When combined with a creamy mousse, they taste fantastic.
