Homemade garlic butter with lots of garlic and parsley is a delicious spread for bread and an addition to roasted vegetables and meats. I either make garlic butter based on fresh or fried garlic. For the one made with fresh garlic, I usually use a small amount of garlic, because too much of it is not good for the stomach. The situation is different with butter made using fried garlic, because there is quite a large amount of it in such butter.

The following recipe is for butter based on fried garlic. In addition to garlic and ghee butter, this spread also contains fresh parsley and a pinch of salt. After frying the garlic until golden brown, I cool it down, then mix it with parsley and salt. I cool it in the fridge and serve. Ingredients for garlic butter.

  • 120 g garlic
  • 120 g ghee butter
  • big bunch of parsley
  • a pinch of salt

How to make garlic butter.

Put ghee in a pot, add peeled garlic cloves to it and fry on a low heat for 12-15 minutes. Let the fried garlic cool down once done. Finely chop the parsley. In a plastic container, combine the fried garlic with the butter in which it was fried, chopped parsley and a pinch of salt. Blend it using a hand mixer. Transfer it into a bowl then place it in the fridge for 30 minutes to allow it to thicken slightly.

Good to know when making Garlic butter.

The ghee butter can be replaced with clarified butter. I wouldn’t diary butter because it can burn during frying.
