Ferrero Rocher cake

This delicious chocolate cake is a combination of creamy chocolate cream, chocolate sponge with nuts and Ferrero Rocher balls.

I can assure you that this cake is really easy to prepare. You have a sponge cake to bake, which is quite simple, and making the cream or the chocolate balls is not a very complicated task either.

Ingredients for Ferrero Rocher cake.
Cocoa cake:
- 5 eggs
- 80 g icing sugar
- 80 g all-purpose flour
- 10 g dark cocoa
- 2 tablespoons of cake flour
- 1 teaspoon of baking powder
- a pinch of salt
- 80 g peanuts
Chocolate cream:
- 350 g milk chocolate
- 400 ml whipping cream (36%)
- 100 g Nutella
- 40 g waffles
Homemade Ferrero Rocher:
- 50 g dark chocolate
- 100 g milk chocolate
- 180 ml whipping cream (36%)
- 50 g unsalted butter
- 80 g peanuts
- 60 g waffles
Chocolate glaze:
- 30 g milk chocolate
- 50 g dark chocolate
- 100 ml milk
- 1 teaspoon of gelatine
Peanut sprinkle:
- 50 g peanuts
How to make Ferrero Rocher cake.
Cocoa sponge cake: put the egg whites into a bowl, add a pinch of salt and whisk until stiff peaks are formed. At that point, add the icing sugar in small batches while continuing to whisk.
Mix the egg yolks in a cup. Sift the flour, cake flour, cocoa and baking powder through a sieve into a bowl.
Add the egg yolks and the dry ingredients from the bowl to the whipped egg whites. Mix gently but thoroughly. Finally, add the chopped peanuts and gently toss them into the cake batter as well.
Line a round-shaped baking tin with baking paper, then pour in the cake batter. Transfer the tin into an oven preheated to 180 degrees Celsius and bake for 25 – 30 minutes. When baked, let the cake to cool, then cut it lengthwise into three equal parts.
Chocolate cream: heat 200 ml of whipping cream in a pot, but do not boil it. Take the pot from the heat and add broken chocolate into it, mix thoroughly until chocolate dissolves. Let it cool down. Next, add Nutella to it and whisk with a manual robot or a whisk. Once done, add 200 ml of cold cream in small batches, while whisking the cream. At the very end, add finely crushed waffle. Stir and chill it for a while in the fridge.
Assembling the cake: spread the chocolate cream on each of the cake layers. Put some of the cream on the top and cover the sides of the cake with it as well.
Chop the peanuts that will be used to sprinkle the sides of the cake very finely, then carefully cover the sides of the cake with them.
Topping: add gelatine to 50 ml of cold milk and let it stand for 5 minutes. Pour 50 ml of milk into a pot and heat it up. Break the dark and milk chocolate into a bowl. Warm the milk with gelatine (preferably a little in the microwave). Add the warm gelatine with milk and the warm milk to the chocolate in the bowl. Mix thoroughly, then cool it down. When the topping starts thickening, pour it over the cake on top.
Homemade Ferrero Rocher balls: heat up the cream with the butter, but do not boil it. Break both types of chocolate into a bowl, then pour hot cream with butter over them. Mix thoroughly. At the end of whisking, add the finely crushed waffle. Cool the mixture and once it’s thick, form the balls. Chop the nuts very finely. Roll each ball in the chopped nuts. Place the finished balls in the fridge for several hours. Decorate the cake with the Ferrero Rocher balls. Of course, the balls taste great, not only as a decoration for the cake but also by themselves.

Good to know when making Ferrero Rocher cake.
The baking tin that I used had a round shape with a diameter of 24 centimetres.
I advise you to use a baking tin with a slightly smaller diameter. The cake then will be taller.
I made the chocolate balls slightly bigger than those you can get in the store. The size of the chocolate balls depends entirely on you 🙂
