In the casseroles I make, I often combine vegetables with pasta. These types of casseroles are extremely filling, which makes them ideal main courses. Served in smaller portions, they are also a nice addition to meat dishes.
One of the casseroles I’ve made is a pasta macaroni with cauliflower. This casserole is extremely “modest” as it contains only a few simple ingredients. Pasta and cauliflower are combined with a cheese sauce based on béchamel sauce. The whole thing is then seasoned with a pinch of salt and pepper. Ingredients for pasta and cauliflower macaroni.
- 150 g beads pasta
- 1 and 1/4 teaspoon of salt
- 350 g cauliflower florets
- 2 tablespoons of butter
- 2 tablespoons of flour
- 600 ml milk
- 5 tablespoons of cheese
- 1/2 teaspoon of freshly ground black pepper
How to make pasta and cauliflower macaroni.
Boil the pasta beads in water salted with 1/2 teaspoon of salt. I cooked the pasta for 8 minutes from the moment the water started boiling. Pour the cooked pasta into a colander and set it aside for a moment to cool it down a little.
Put the butter and flour into a pot. Heat it over a medium heat for about a minute, then add milk in small rivulets. Cook for 3-4 minutes, stirring constantly, preferably with a whisk to avoid lumps in the sauce. At the end of cooking, add cheese, pepper and 1/4 teaspoon of salt.
Finely chop the cauliflower florets with a knife or blend them with a food processor. Combine the pasta, cauliflower, cheese sauce and 1/2 teaspoon of salt in a large bowl. Next, transfer it into a casserole dish and cover it with aluminium foil or a lid. Put the dish in an oven preheated to 180 degrees Celsius and bake for 50 minutes. After that, carefully remove the lid or the aluminium foil and continue baking for another 20 minutes. After removing the pasta and cauliflower macaroni from the oven, set it aside for 5 minutes.

I used a 24 by 24 centimetre ovenproof baking dish.
Most types of pasta will work well in this casserole. Pasta with small shells or small shapes will be best.
You can use any type of cheese. I recommend cheeses with an intense flavour such as Gruyère or Cheddar.
