Deep-fried sardines

Sardines are small fish that taste delicious when smoked, fried and marinated in oil. They are perfect when served as a snack with beer or as a side dish.

One of the quickest and easiest ways to prepare sardines is to lightly coat them in flour and spices and fry them. If you prefer sardines in such a way, you can serve them either by themselves with a little lemon juice, or you may use them as a basis for other dishes, e.g. a sandwich paste with tomatoes or eggs.

Ingredients for deep-fried sardines.

  • 400 g fresh sardines
  • 1 flat teaspoon of salt
  • a pinch of black pepper
  • 3 tablespoons of plain flour
  • 1 flat teaspoon of sweet paprika powder
  • sunflower oil for frying
  • lemon for serving

How to make deep-fried sardines.

Place the cleaned sardines in a bowl, pour cold water over them and let them stand for 30 minutes. Then pour off the water, wipe each sardine gently with a paper towel to dry them and remove any scales. Put flour, sweet paprika, salt and pepper on a plate. Put the sardines in the plate and coat them thoroughly.

Pour oil into a deep frying pan or a pot, heat it up and once hot, put in the sardines. Fry over a medium heat for about 5-6 minutes. Drain the excess oil from the fried fish by putting them on a paper towel. Serve drizzled with freshly squeezed lemon juice.

Good to know when making deep-fried sardines.

The sardines should be deep-fried, so there should be enough oil in the pot or pan for the fish to float freely in it.

It’s best to buy sardines that are already clean, with the insides and scales removed.
