During Christmas, there is always some fish on the table at my home. This year I will spend Christmas in two countries with different Christmas traditions.
In Poland, my parents will surely treat me with carp in warm cream sauce. You can already find the recipe for that dish on the blog.
On the other hand, the Hungarian part of the family will prepare fish soup. I have already shared with you the recipe for that soup as well.
This year I am going to prepare a dish well liked by both parts of my family: fish with vegetables. When I made this fish for the first time in Hungary, I gave some of it to the family here to taste. They really liked the combination of vegetables and spices with meaty fish. I already know that I will be using this recipe not only during Christmas but also throughout the year.
Ingredients for fish with vegetables.
- 800 g fresh fish fillets (catfish, cod, hake)
- sunflower oil for frying
- 4 tablespoons of flour
- 2 tablespoons of lemon juice
- 3/4 teaspoon of salt
- a pinch of black pepper
- 300 ml water
- 1 big parsnip
- 1/2 medium sized celeriac root
- 1 small leek
- 3 big carrots
- 1 big onion
- 3 tablespoons of apple cider vinegar
- 2 berries of allspice
- 2 bay leaves
- 1 tablespoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of crystal sugar
- 2 tablespoons of butter
- 3 tablespoons of tomato concentrate
How to make fish with vegetables.
Fish preparation: cut the fish into 4 centimetre wide strips. Sprinkle each strips with lemon juice, salt and pepper and coat in flour. Heat the oil in a frying pan and once hot, place the fish strips on it. Reduce the heat to medium and fry on both sides for two to three minutes. Place the fried fish on a paper towel to get rid of excess oil.
Vegetables preparation: grate the carrots, parsley and celeriac on a large-mesh grater – if you have time, you can cut them into thin strips. Dice the onion into small cubes.
Put the butter on a frying pan and melt it. Add chopped and grated vegetables then fry for 5 minutes over a medium heat. After that, add water, allspice and bay leaves. Reduce the heat to low and simmer covered for 20 minutes. Finally, add the vinegar, tomato concentrate, salt, pepper and sugar. Increase the heat and evaporate the excess liquid, stirring from time to time. This should take up to 10 minutes.
Transfer the fried fish pieces in an ovenproof dish and spread the cooked vegetables all over the fish.
Cover the dish with a lid or aluminium foil and put in an oven preheated to 180 degrees Celsius for 15 minutes.
Serve the dish warm or cold as desired.
Good to know when making catfish with vegetables.
You can cut the vegetables into very thin slices. Due to the lack of time, I used a grater.
I have gone for fresh and not for frozen catfish. The meat of that fish tasted amazing.
