Chicken roulades with feta and asparagus

Green asparagus is a vegetable I really like using for my cooking. I like its taste as well as the simplicity with which it can be prepared. For some it might seem that asparagus does not have a very characteristic taste, but when combined with the right additions or seasoned properly, it really is an absolute winner.

What can you prepare from asparagus? Personally, I mostly use it for soups, tarts, salads, snacks and appetizers. It is perfect when baked wrapped in bacon, served with poached eggs, Parmesan or served boiled as a side dish.

This time, I used it for preparing chicken roulades. I combined the green asparagus with feta cheese and stuffed chicken breast with it. I slightly fried the roulades then baked them in wine and cream sauce. You can serve these chicken roulades with rice, on their own or with salad.

Ingredients for chicken roulades.

  • 1 kg chicken breast (4 pieces)
  • 8 pieces of green asparagus
  • 200 g feta cheese
  • 1 teaspoon of salt
  • black pepper to taste
  • 2 tablespoons of sunflower oil
  • 100 ml of cream (30%)
  • 150 ml dry white wine

How to make chicken breast stuffed with feta cheese.

Cut each breast lengthwise so that two two pieces are created. Flatten the breasts with a meat pestle, then place them on a counter. Season the chicken with salt and pepper.

Clean the asparagus, cut off the stringy bottom from each.

Cut the feta cheese into 8 pieces.

Place one asparagus and one piece of feta on every chicken breast, then roll the breast into small roulades.

Heat the oil in a frying pan and once hot, put in the roulades. Fry on all sides over a high heat until golden brown.

Place the chicken roulades in an ovenproof dish, pour wine and cream over them. Do not cover the dish. Place the dish in an oven preheated to 180 degrees Celsius and bake for an hour. Serve the chicken roulades with rice or groats.

Good to know when making chicken with feta and asparagus.

It’s best to use baby asparagus as they are the softest. I used green asparagus when making this dish but white ones will also work here.

Don’t cover the baking dish when in the oven, as the alcohol from the wine should evaporate completely.
