Gluten-free plum cake
This time I want to encourage you to bake a simple plum cake. The basis of this cake is almond flour, chocolate, margarine, eggs and brown sugar. All ingredients should be combined together, preferably with a mixer. Next, the plums should be put into the cake batter and the whole thing goes in the oven. Ingredients for gluten-free plum cake.
- 400 g plums
- 100 g milk chocolate
- 150 g margarine
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 250 g almond flour
- 3 big eggs
- 1 teaspoon of cinnamon
- 100 g light brown sugar
- a pinch of salt
- icing sugar for sprinkling the cake
How to make gluten-free plum cake.
Put soft margarine, a pinch of salt and brown sugar in a bowl. Rub for 7-8 minutes, preferably with a mixer. After that, add one egg at a time, all while mixing it. Then gradually add the sifted flour, cinnamon, baking soda and baking powder. Mix for about 2 minutes, then add liquid but cold chocolate. Combine all ingredients thoroughly.
Put the cake batter into a baking tin previously lined with baking paper. Place the halves of the plums in the cake batter, skin side down. Put the cake in an oven preheated to 180 degrees Celsius. Bake for 50 minutes. After baking, let the cake cool down and sprinkle with icing sugar once cold.

Good to know when making gluten-free plum cake.
I used a rectangular baking tin measuring 20 by 30 centimetres.
The weight of the plums is given in the ingredients before removing their pits. Before adding the plums to the cake batter, I washed and dried them, cut each one in half and removed the pits. You can use any type of plum to make this cake.
The chocolate can be dissolved in a microwave or over boiling water. For the latter, put the chocolate in a bowl, place the bowl over a pot with boiling water and stir the chocolate until it is liquid.
