Eton mess is a traditional English dessert. This dessert is a combination of whipped cream with meringues and fruit. The most common fruits in this dessert are strawberries, blueberries, blackberries and raspberries.

The name of the dessert probably comes from its appearance. It looks like a mess, hence the name. All the ingredients are combined into one messy mixture of different consistencies.

It is one of my favourite desserts and I ate it very often during the period when I lived in England.

As unfortunately, the regular whipped cream I can buy here has a slightly different consistency from the English double cream normally used in this dessert, I also used some mascarpone cheese to prepare my version of this dessert.

Ingredients for Eton mess.

Homemade meringues:

  • 4 egg whites in room temperature
  • 220 g icing sugar
  • 1 teaspoon of vinegar
  • a pinch of salt

Whipped cream with mascarpone:

  • 300 ml whipped cream (36%)
  • 100 g mascarpone cheese
  • 4 passion fruits
  • 125 g blueberries
  • 8 small meringues

How to make Eton mess dessert.

Meringues: put the egg whites in a bowl, add a pinch of salt and whisk until stiff. Add icing sugar sifted through a sieve in small portions while whisking continuously. At the end, add the vinegar.

Put the egg white mixture into a confectionery bag. On a baking sheet lined with baking paper, use any decoration nozzle to shape meringue circles of 4-5 centimetres in diameter. Put the tray in an oven preheated to 110 degrees Celsius for an hour and a half. After baking, turn off the oven and leave the meringues in it until they completely cool down.

Whipped cream with passion fruits: take out cream from the fridge, pour it into a bowl, beat until half stiff, then add mascarpone and carry on whisking until stiff. Add the meringue broken into small chunks and blueberries. Remove the seed-filled center of the passion fruit and put it into a bowl. Pour some of the meringue and cream mixture into cups, then cover with a little of passion fruit and blueberries, then one and one layer of each one again. Top the dessert with meringues and blueberries.

Good to know when making Eton mess.

I did not add any sugar to the cream mixture, because the meringues used in the dessert are very sweet.

Passion fruit has a slightly sour taste. Combined with sweet meringues, it gives the dessert an amazing flavour.

I made meringues at home. From the proportions given above, you will get more than 8 pieces of meringues. Those one that you end up not using can be easily stored in a tightly closed container for several days.
