Danube waves cake

Danube waves cake is a combination of butter cake with apples and custard cream. The butter cake consists of two coloured batters – plain one and cocoa. First the plain cake batter is poured on a baking tray, apples are placed on top of it, then they are covered with cocoa cake batter. The cake goes to the oven and, after baking, it is decorated with custard cream. I found the recipe for Danube waves cake in my mother’s baking notebook and as far as I know the recipe is quite old. I don’t even remember when my mom last baked this cake, because now she’s rather focusing on more “modern” recipes.

Ingredients for Danube waves cake.

  • 300 g all-purpose flour
  • 5 eggs “M”
  • 1 and 1/2 teaspoon baking powder
  • 250 g icing sugar
  • 2 tablespoons dark cocoa
  • 3 tablespoons milk
  • 250 g margarine
  • 400 g apples
  • packet of vanilla sugar
  • 1 tablespoon of vanilla pudding powder

Custard cream:

  • 40 g vanilla pudding powder
  • 400 ml milk
  • vanilla sugar
  • 80 g crystal sugar
  • 250 g butter

Additionally:

  • 50 g grated dark chocolate

How to make Danube waves cake.

Preparation of butter cake.

Put soft margarine, icing sugar and vanilla sugar in a bowl. Mash for a few minutes until you get a creamy consistency. While continuing to grind, add the egg yolks one at a time, then the sifted flour with baking powder.

In a separate bowl, whisk the egg whites until stiff peaks are formed, and when ready, gently add them to the batter in the second bowl. Divide the cake batter into two parts, add milk and cocoa to one, and leave the other plain.

Sprinkle the pudding powder over the apples sliced into large pieces.

Pour the plain cake batter into a baking tray lined with baking paper, place apple pieces on it and cover with cocoa batter. Bake the cake for 50 minutes in an oven preheated to 180 degrees Celsius. Let the baked cake cool down.

Custard cream preparation.

Pour 250 ml of milk into a pot, add crystal sugar and vanilla sugar, and bring it to a boil. In a cup, mix the pudding powder with the remaining milk and when the milk in the pot starts to boil, pour in the pudding from the cup. Reduce the heat to low and cook for 3 minutes, stirring continuously. Remove the cooked custard from heat, cover it with cling film and let it cool down.

Using a blender, rub the soft butter until fluffy. Next, add the cold custard cream to it in small batches, while grinding constantly. Grind the ingredients for about 2 minutes, or until there are no lumps in the mass.

Assembly of Danube waves cake.

Thoroughly cover the cold apple cake with the custard cream, and sprinkle the top with grated dark chocolate. Put the cake in the fridge for a few hours, so the cream can thicken properly.

Good to know when making Danube waves cake.

I baked the cake in a metal baking tray measuring 32 by 24 centimetres.

The weight of apples, which I give in the recipe, is their weight after peeling.

You can replace the grated chocolate with chocolate glaze.
