Apricot and tapioca dessert in a cup
I have recently bought some tapioca and I was thinking for a while what to make from it. After some consideration, I decided to use it for making a dessert. As you might know, tapioca has no gluten so it will be perfect for all of you who cannot consume it. Tapioca is a starch extracted from processing cassava root. Usually, you can get it in the form of pearls, flakes and flour.
Tapioca pearls are mostly used for desserts. You can buy them colourless or coloured. Their size also varies, as they can be very small and quite large. Tapioca pearls combine well with milk, so I recommend using them for milk-based desserts.

Ingredients for tapioca dessert.
- 100 g tapioka
- 700 ml milk
- 1 teaspoon of honey
- 4 big apricots
- 1/2 teaspoon of lemon juice
- 2 teaspoons of icing sugar
How to make tapioca and apricot dessert.
Pour milk into a pot and bring it to a boil. When the milk starts boiling, add tapioca pearls and cook them on a small heat for the time indicated on their package, while stirring constantly. Cool the cooked tapioca slightly, add honey to it and mix.
Cut the apricots into pieces and place them in a bowl. Add icing sugar, lemon juice and mix until it gets a uniform consistency. Transfer the tapioca into cups, then cover it with apricot cream and with tapioca again. Cool the finished desserts in the refrigerator.
Good to know when making tapioca and apricot dessert.
The package of my tapioca said to cook it for 10 minutes, but I cooked it for over 15 minutes, as after 10 minutes the pearls were still hard.
I used cow’s milk. You can replace it with coconut or almond milk.
The honey in my dessert is natural acacia honey. I recommend using natural and floral honeys, especially.
