Ingredients for apples in batter.

  • 2 large eggs
  • 200 g cake flour
  • 3/4 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1 vanilla sugar (16 g)
  • 200 ml milk
  • 600 g apples

Additionally:

  • oil for frying
  • powdered sugar for dusting

How to make apples in batter.

Cut washed and pat-dried apples into half-centimetre thick slices. When done, put them on a chopping board and cut out the seeds.

Pour the milk into a bowl, add the eggs and whisk for a moment with a hand whisk. Next, add in the vanilla sugar, baking powder as well as the cake flour and salt sifted through a sieve. Continue whisking until there are no lumps in the batter.

Pour oil into a frying pan and heat it up. Coat each piece of apple slice in the batter, then place them in the hot oil. Fry on a medium heat for about 5 minutes – the apples inside should be soft. Flip the cakes over while frying. Place the fried apples on a plate lined with paper towels and sprinkle them with powdered sugar.

The apple slices can be with or without skin. I usually do not remove the skin, although it is true that the skin is sometimes noticeable in the cakes. Soft, juicy and sour apples work best in this recipe.
