Puff pastry pepperoni snacks
Puff pastry has conquered my kitchen for good.
I’ve just gotten back from work and now I am eating snacks I made yesterday 🙂
I had a baking day yesterday. I made not only a delicious apple-blackberry cake, of which I shared photos with you on Instagram but I also prepared “pockets” of puff pastry stuffed with pepperoni, cheese and tomato. I sprinkled them with pumpkin seeds.
While the preparation of the apple and blackberry cake took me quite some time, the pockets of puff pastry were created in the blink of an eye.
Please, note that I did not make the puff pastry from scratch at home, I simply bought a ready-made one in the shop.
I do not see anything wrong with buying ready-made pastry. Nowadays, when people are on the run, spending much of their time working, hours in the kitchen should be wasted on preparing pastry.

Ingredients for puff pastry with pepperoni.
- packet of puff pastry (275 g)
- 50 g of cheese (e.g. Cheddar, mozzarella, it should be sliced)
- 1 egg
- 1 tablespoon of pumpkin seeds
- 1 medium tomato
- 12 slices of pepperoni
How to make puff pastry with pepperoni.
The puff pastry should be chilled. Do not use pastry, which has a room temperature. It will be sticky, hence it will be harder for you to work with it.
Remove the puff pastry from the refrigerator and roll it out on the counter. Cut it into squares with sides of 5-6 centimeters. Place a slice of cheese, a slice of pepperoni and a slice of tomato on the middle of each square. All squares should be quite thin, of about 3 millimeters each.
Break an egg into a bowl and beat it up with a fork. Cover the sides of each square with the beaten egg. Hold the opposing corners of the pastry and fold them up towards the middle – do the same for the corners across. Gently stick the folded-up corners together. Brush the top of the pockets with egg and sprinkle them them with pumpkin seeds.
Place them on a baking tray lined with baking paper. Bake for 40 minutes in an oven preheated to 180 degrees Celsius.

Good to know when making pepperoni snacks.
Pepperoni can be replaced by salami, Chorizo or any other slightly spicy sausage.
I used mozzarella cheese. Any other cheese that melts nicely will be perfect for this snack.
If you like very spicy food, add a few pieces of jalapeno peppers in the pockets.
