Rhubarb syllabub
Syllabub is a sweet dessert made from cream or milk with a small amount of wine or cider. This dessert originates from England. My favourite version of syllabub is the one that is made with an addition of fruit. Fruits that work great in this dessert are rhubarb, forest fruits or even cherries. I best like syllabub with rhubarb and today’s recipe is for that version.
To prepare syllabub, you need to combine whipping cream with mascarpone cheese. This combination helps to get a thicker consistency of the mixture. The cream and mascarpone cheese are complemented by creamy rhubarb. I acquire that consistency by slightly boiling it with sugar, water and wine, then cooling it down. I serve the syllabub in dessert cups. I put the cooked rhubarb at their bottom, which I then cover with the mascarpone and cream mixture. I am serving the syllabub cold. Ingredients for rhubarb syllabub.
- 300 g rhubarb
- 2 cloves
- 3 tablespoons crystal sugar
- 50 ml water
- 50 ml semi-dry red wine
- 200 ml whipping cream (36%)
- 100 g mascarpone cheese
- 1 tablespoon icing sugar
How to make rhubarb syllabub.
Wash the rhubarb, cut it into 2-centimeter long pieces, then put it in a cooking pot. Add water, crystal sugar, cloves and red wine. Put the pot on the heat, bring it to a boil, then cook the rhubarb over a low heat for about 12 minutes. Next, remove the pot off the heat and let the soft rhubarb cool down.
Put the cold cream and icing sugar into a bowl. Whisk it until the cream is semi-stiff. At that point, add the mascarpone cheese and continue whisking until everything is quite thick. The cream should not be whipped for too long.
Place the cold rhubarb into serving cups, cover it with whipped cream with mascarpone. Keep the dessert cups in the refrigerator before serving.

Good to know when making rhubarb syllabub.
You can obtain two large or four small cups with syllabub dessert from the given amounts of ingredients.
Before placing the cooked rhubarb in dessert cups, remove the cloves from the cooked rhubarb.
