Letcho in a jar is a great way to use large amounts of zucchini, tomatoes and peppers. In addition, such a letcho is perfect when you do not have time to cook dinner. All you need to do is to open the jar, heat up the letcho and dinner is ready. This letcho can be served by itself with bread or rice. It also works well as an addition to meat dishes such as baked chicken thighs or meatballs.

My Hungarian grandmother makes letcho only from peppers, tomatoes and onions. Due to the fact that I love zucchini, I always add it to my letcho. I make this letcho in a mild version, without the addition of hot pepper. If you are someone who likes spicy food, feel free to add spicy pepper to it. Ingredients for winter letcho.

  • 500 g onion
  • 1.5 kg peppers (mix of yellow and red)
  • 1.5 kg tomatoes
  • 2 kg zucchini
  • 200 ml sunflower oil
  • 2 tablespoons of salt
  • 1/2 teaspoon of black pepper
  • 4 bay leaves
  • 1 tablespoon of powdered sweet paprika

How to make winter letcho.

Pour the oil into a pot, add diced onion and fry it over a medium heat for 5 minutes. Then add the diced tomatoes and zucchini. Bring it to a boil and from the moment it starts to boil, cook it for 15 minutes over a medium heat. Next, add bay leaf, salt, pepper, paprika powder and coarsely cut yellow and red peppers. Bring it to a boil again, cover, then simmer for 40 minutes or until the vegetables are tender. Put hot letcho into scalded jars, close the lids on them tightly and pasteurize for 15-20 minutes, depending on the size of the jars. I have described how exactly to pasteurize jars HERE.

Good to know when making winter letcho.

I didn’t peel the zucchini, I just washed it well and cut the ends of. It was similar with the tomatoes, I used the tomatoes with the skin on.

In the ingredients I provided the weight of peeled onions.

Before slicing, I washed the peppers, dried them and removed the seed.

From the given amount of ingredients, I got a little over 5.5 litres of letcho.
