Tortellini are small Italian dumplings filled with meat or cheese. Their shape resembles Polish dumplings served with borscht. The dumplings are served both warm and cold. Tortellini can be served with tomato sauce, broth, grilled vegetables, deep-fried and in salads.

This tortellini salad recipe is simple and does not require any sophisticated ingredients. In addition to the dumplings, the salad also includes feta cheese and roasted cocktail tomatoes, which give it a sensational taste. I am sure that if you taste this salad once, you will be making it very often from thereon.

Ingredients for tortellini salad.

  • 250 g tortellini dumplings
  • 500 g cocktail tomatoes (yellow, red, green)
  • 2 tablespoons of olive oil
  • 4 big garlic cloves
  • 200 g canned pumpkin
  • 1 teaspoon of salt
  • 1 green onion
  • 1/4 teaspoon of black pepper
  • 200 g feta cheese
  • 150 g natural joghurt
  • 1/2 teaspoon of dried oregano

How to make tortellini dumplings salad.

Boil the tortellini dumplings according to the instructions on the package, in water salted with 1/2 teaspoon of salt.

Place the cocktail tomatoes and garlic in an ovenproof dish, season with 1/2 teaspoon salt and drizzle with olive oil. Put the dish in an oven preheated to 180 degrees Celsius for 30 minutes. Once done, let the tomatoes cool down and mash the garlic with a fork in a cup.

Dice half of the feta cheese into small cubes. Drain the sweetcorn.

Combine the remaining half of the feta cheese with the joghurt, garlic, oregano and pepper in a cup.

In a bowl, mix the tortellini, sweet corn, sliced feta cheese, finely chopped green onion and baked tomatoes. Pour in the sauce from the cup and mix gently. Let the salad chill in the fridge before serving.

Good to know when making tortellini salad.

I cooked the tortellini for 10 minutes, then put them in a colander, pour cold water over them and set aside to cool completely.

I baked the garlic in its shell. I peel it off after baking and cooling down the garlic.

I used tortellini stuffed with meat.
