Shortbread ginger cookies
I made these cookies for Easter. I am uploading the recipe only just now as I was busy and had no time for it earlier.
I have made my cookies in different shapes and sprinkled them on the top with granulated sugar.

Ingredients for shortbread ginger cookies.
- 250 g of plain flour
- 2 eggs
- 120 g of unsalted butter
- a pinch of salt
- 100 g of caster sugar
- 1 vanilla sugar or a tea spoon of vanilla extract
- 1 teaspoon of ginger powder
- 2-3 tablespoons of granulated sugar
How to prepare shortbread ginger cookies.
Sift flour on the pastry board. Add butter, ginger, caster sugar, vanilla sugar and salt. Chop then add one egg. Knead the dough. Put it in the fridge for 1 hour. After removing from the fridge, roll out the dough on a pastry board with some flour on it so the dough would not stick to it. Roll the dough until it gets around 4 mm thick. Cut out the cookies in any shape you like. Put the cookies on a baking sheet lined with baking paper. Cover them with a beaten egg and sprinkle with sugar. Bake at 200 degrees Celsius for 15 minutes.

Good to know when making ginger cookies.
Ginger can be replaced with cinnamon.
Let the cookies cool down after baking. Otherwise, they will be more fragile.
Ginger cookies taste best served with a glass of milk.
