Ingredients for salad with feta, avocado and beetroot.
- 200 g feta cheese
- 3 tablespoons of pine nuts
- 200 g Roman lettuce
- 1/2 small red onion
- 1-2 avocado
- lemon juice for drizzling the avocado
- 150 g cooked beetroot
- 1/2 pomegranate
Salad dressing:
- 1 tablespoon of lemon juice
- 2 tablespoons of olive oil
- 1 tablespoon of honey
- 1/2 teaspoon of salt

How to make salad with feta, avocado and beetroot.
Cut the avocado in half lengthwise, remove the pit, peel off the skin, slice the flesh, then drizzle with lemon juice. Thinly slice the red onion, cut the lettuce into large pieces, and cut the beetroot and feta cheese into large cubes. Pour the honey, salt, olive oil, and lemon juice into a small bowl and mix it.
Arrange the lettuce, avocado, beetroot, onion, pomegranate seeds and feta cheese on a plate, platter or serving bowl. Sprinkle with pine nuts and drizzle with salad dressing.

You can replace the feta cheese with salad cheese.
In this recipe, you can use cooked beetroot or you can cook it yourself at home. If you choose to do it yourself, you will need to adjust the cooking time depending on the size of the beetroot and whether you choose young or slightly older beetroot.
