Quark cheese and puff rice dessert
Cold quark cheese always works for me, be it in a cheesecake or any other type of dessert.

Quark cheese is used in both cold and baked cheesecakes. You can also find it in dumplings or pancakes.
Due to the fact that I have an intolerance to dairy products, I always opt for cheese without lactose. I do not know if simply I have become accustomed to it but I do not feel any difference between lactose free and regular cheese. So if you have some guests with a similar intolerance, you can make this dessert for everyone from lactose-free ingredients. I also make cheesecakes or dumplings from time to time, using lactose-free cheese.
For this weekend I am giving give you a cold dessert, for which I used not only cheese but I also prepared rice and I combined them all with fruits.

Ingredients for quark cheese dessert.
- 40 g of puffed rice
- 90 g of white chocolate
- 2 tablespoons of butter (lactose free)
- 200 ml of double cream (lactose free)
- 250 g of quark cheese (lactose free)
- 2 tablespoons of caster sugar
Fruit sauce:
- 100 g of frozen fruits, e.g. raspberries
- 3 tablespoons of caster sugar
- 1 tablespoon of lemon juice
- selection of fresh fruits for decoration

How to make cheese dessert.
Dissolve the chocolate and butter and mix them thoroughly. Pour puffed rice into a bowl, add the mix of dissolved chocolate and butter and combine them all, then let it cool.
Whisk double cream until semi-stiff, add caster sugar then carry on whisking for a few more seconds. Afterwards, add quark cheese in small batches, while whisking continuously.
Combine the cheese mixture with the puffed rice.
Pour frozen fruits, caster sugar and lemon juice into a blender. Blend it.
Put the cheese and rice mixture into serving glasses. Drizzle with fruit sauce and garnish with fresh fruits.
Before serving, cool it down in the refrigerator.

Good to know when making cheese and fruit dessert.
Frozen fruits can be replaced with fresh ones. I used frozen raspberries and also a mixture of frozen forest fruits.
I did not use too much caster sugar because I do not like over-sweetened desserts. However, if you like sugar, you can increase its amount.
