This recipe is for fish baked with rosemary, tomatoes, lemon and onion. The preparation of this dish is very simple, you don’t have to work hard on it. It is important to buy fish that has already been scaled, gutted and cleaned. All that you will have to do is to wash it, dry it and put it on the vegetables.

Any fish prepared according to this recipe will make a healthy, light and very tasty meal. I recommend serving it with rice and the vegetables used to bake it with.

Ingredients for oven baked fish.

  • 500 g whole, fresh fish
  • 300 g cocktail tomatoes (I used a mixture of red and yellow ones)
  • 7-8 twigs of fresh rosemary
  • 50 g red onion
  • 3 tablespoon of olive oil
  • 1 flat teaspoon of salt
  • black pepper to taste
  • 1 lemon washed and sliced

How to make oven baked fish.

Clean the fish then make slits with a sharp knife in several places on both sides. Rub it with salt and pepper, put a few sprigs of rosemary and a few slices of lemon inside the fish. Place the cherry tomatoes, the remaining rosemary and lemon slices as well as red onion cut into large pieces in a baking tray. Place the fish on top of the vegetables and pour olive oil on top of it. Put the tray in an oven preheated to 220 degrees Celsius for 20-25 minutes or until the fish reaches an internal temperature of 65 degrees Celsius.

Good to know when baking fish.

For baking, I selected Balon’s ruffle. It was the first time I made a dish from that fish. When doing the shopping, it was the only fresh fish available, hence my choice. I do not regret it because the fish turned out to be extremely tasty. You can prepare other species of fish the same way, e.g. sea bream, trout, cod or pollock.
